Today I am going to show you how easy it is to make. My Mom actually taught me this vegan curry recipe. I think one of the reasons it is a favorite is that it uses so many of my favorite ingredients: sweet potato, kale, coconut, and tofu! What more can you ask for? Full of flavor and nutrients, I cannot say enough good about this recipe. It is hands down one of my favorites.

The leaves are beginning to turn those glorious reds and yellows and the farmer’s markets are filled with lots of fresh vegetables. One of my favorite veggies is fresh corn. There is just nothing like it. Today we are making a fresh, practically right off the farm corn salad. It has such a fantastic amount of nutrients, but best of all, it tastes amazing.

Vegan Toasted Garlicky Tomato Sandwich with Basil & a Grape Lemon Reduction

If you have never had a toasted garlicky tomato sandwich before, you have been missing out. This is one of those recipes that seems deceptively simple, but the flavor combination makes this a gourmet all time favorite. The trick to this wonderful sandwich is plenty of garlic, plenty of basil, and farm fresh tomatoes. It is absolutely wonderful with the grape lemon reduction, but the sandwich can definitely stand on its own. So if you are short of time, skip the reduction, or make it ahead of time and store in a glass jar in the fridge. It will last for several days.

Easy, easy, and did I mention easy? This is such a quick and delicious summer pasta dish, but let not that fool you into thinking this is not a world-class dish. It is probably my mom’s all-time favorite. It is best when made with farm fresh tomatoes, fresh basil, and lots of garlic. It can be whipped up in just a few minutes and is one of those gourmet pasta dishes that will come in handy when you need something quick or have fancy guests for dinner. It works either way.

Chef Ani is a graduate of the Natural Gourmet Institute of New York City. She loves to cook and has been in the kitchen as far back as she can remember. A life-long vegetarian and now a plant-based chef, she enjoys junk food as much as the next guy, but realizes that though it tastes good, it is not good for her. Have you ever heard the saying: “You are what you eat”? Well, science is telling us that this is absolutely true. The food choices we make today are super important to how we feel and operate tomorrow. Wouldn’t it be wonderful if we could come up with recipes that do both, taste delicious and make us feel wonderful? That is chef Ani's quest.
