There is nothing quite as beautiful as a summer fruit salad, and on these hot July days, it is absolutely perfect. The vibrant colors and sweet flavors are just an excellent addition to any meal. One of our favorite fruits this time of year, besides berries, is watermelon. The pink and green color, the sweet watery content, refreshing taste, besides being incredibly fun to eat, is the base of this wonderful fruit salad. We have combined our favorite summer fruits for this stunning summer fruit salad with a lime mint dressing.

Vegan Raspberry Cake

My dad loves this cake. You can be so creative when decorating this cake. You can add some blueberries and make it a red, white, and blue cake for the 4th of July or you can decorate it with lemons and mint for a different look. I chose to decorate with raspberries and mint this time. It is Raspberry Season, and the berries are large, sweet, juicy, and flavorful. What a perfect time to make a Raspberry Cake.

Chef Ani is a graduate of the Natural Gourmet Institute of New York City. She loves to cook and has been in the kitchen as far back as she can remember. A life-long vegetarian and now a plant-based chef, she enjoys junk food as much as the next guy, but realizes that though it tastes good, it is not good for her.
