Walnut Farro Salad

This incredible salad is quick and easy to prepare and features farro, a deliciously nutty grain, combined with crunchy celery, sweet apples, oranges, and cherries, and the tang of fresh lime juice. This dish can be served slightly chilled or at room temperature, whichever you prefer!

Ingredients:
  • 2 cups cooked farro
  • 1 cup apples, peeled and diced
  • ¾ cup toasted walnuts, chopped
  • ½ cup celery, chopped fine
  • ½ cup dried cherries
  • 1 cup canned mandarin oranges
Dressing:
  • 2 Tbsp. canola oil
  • 4 Tbsp. fresh lime juice
  • ¼ tsp. salt
Directions:

Combine all salad ingredients together in a large bowl. In a separate bowl, combine dressing ingredients and mix well. Pour dressing over salad and stir to combine.

Yields: 6 cups
